RAW CARAMEL-CHOC BAR.

hey—

after moving to NYC i decided my website & my diet needed a major pick-me-up. i thought, what better way to do so then making an amazing raw, vegan, gluten free, grain free, & refined sugar free dessert. these raw caramel-choc bars are sure to satisfy any sweet tooth, but without the guilt! filled with nature’s many candies, they are a treat you and your body will enjoy. it is so important to be fueling your body with whole, natural, and unprocessed foods. these are the foods that will not only make you look your best, but feel your best too, which is what is most important. also keep in mind that you always have the option to add, subtract, & substitute—this recipe is here to guide you, but your bars will probably turn out equally as delicious if you change it up!

ingredients.

coconut-almond crust

3/4 cup almonds

1 cup almond flour

4 dates, pitted & soaked

1/4 cup flax seed meal

1/2 cup coconut flakes

1 tsp vanilla extract 

1/2 tsp salt

 

caramel filling

14 dates, pitted

1/2 cup almond butter

1/4 cup vegan cream cheese

1/4 cup almond flour

2 tbsp maple syrup

1 tbsp coconut oil, melted

1 tsp vanilla extract

 

choc glaze

1 1/2 tbsp cocoa powder

2 tbsp coconut oil, melted

1 tbsp maple syrup

 

topping

drieg fig, halved

coconut flakes

directions.

  1. combine all coconut-almond crust ingredients in food processor. i started with whole almonds alone to chop them into fine pieces, but not quite a flour—then add the other ingredients. once your mixture is well-combined, press into storage container using your hands or a wooden spoon. place the container in the freezer while you move onto the next layer.
  2. combine all caramel filling ingredients in food processor, taste and adjust. once your mixture is well-combined and a gooey consistency, then layer the filling onto the crust. spread with a wooden spoon & pop back in the freezer while you prepare the glaze.
  3. heat coconut oil and combine with cocoa powder and maple syrup. poor over the other two layers and add toppings. i sliced the the dried figs in half and laid them over the glaze, then sprinkled coconut flakes, but feel free to top these with whatever you have on hand! 

yes it is that simple. note that i don’t typically measure precisely and you may need to adjust quantities where you see fit—don’t stress over it. finally, i prefer to store these in my freezer until ready to eat. trust me these will pass any taste test—enjoy! & tag me on instagram @fitfoodfreie if you recreate.
